The morning was fresh with cool breezes after a night of lightning and thunderstorms. My husband went outdoors to enjoy the pleasant morning at a picnic table that is sitting under a tree between two apartment buildings in our neighborhood.
Usually, baking is forbidden in the Summertime, as the heat from the oven makes the apartment unbearable. However, the cool morning (and the bottle of buttermilk in the fridge) seemed to say that 25 minutes would be alright.
Almost any food tastes wonderful straight out of the oven, so I had to try another muffin this afternoon. They still taste good. What I noticed more was the texture; there is a difference between a muffin and a cupcake.
Last week, I baked some mini muffins and added fresh blueberries to the batter. The photos came out blurry, so I didn’t post the recipe. The mini muffins stuck to the pan, so I used paper liners this time.
3 packets flavored instant oatmeal
1 cup buttermilk
1/2 c unsalted butter
1/2 c dark brown sugar
1 c all-purpose flour
1 t baking powder
1/2 t baking soda
Bake at 400*F 20-25 minutes.
