6 large eggs
1/2 cup Mizithra cheese
1/2 t black pepper
1/4 cup turkey bacon bits
1 small onion, diced
1 cooked, sliced potato
6 stalks asparagus
1 cup cherry tomatoes, halved
Preheat your oven to 400*F.
Lightly oil your Pampered Chef* pie plate.
Whisk together the eggs, cheese, pepper, salt, and basil. Set the mixture aside.
Saute the onion and asparagus. Add the sliced potato and cherry tomatoes. Add the bacon bits and egg mixture. Stir the ingredients constantly;continue until the eggs just begin to set.
Transfer the mixture to your pie plate. Place this in the preheated oven. Allow the frittata to bake 10-12 minutes, until the eggs have set completely.
You will find that the slices of the frittata maintain their shape if you allow it to cool a bit, before serving.
