That mini crock pot that comes as a bonus with the regular-sized one, is really quite versatile. I’ve used it for melting chocolate, beans & little smokies, dips, as well as for keeping soups or chili sauce warm. Just because it is small, doesn’t mean it can’t do a big job. This week I used ours to cook slices of pork loin. The result is pull-apart shreds of flavorful meat. All you need is some vinegar, salt and pepper for seasoning.
This morning, I bought fresh corn, but the rest of the meal was made from things we had on hand. Half and avocado, one pink grapefruit, some minced green chile, salt, pepper and a sliced green onion combined to produce a satisfying salsa. You could eat it as a salad or use it alongside pork and a bit of queso fresco in a corn tortilla.
