Seminary Soup


Seminary days are long gone, and with them I seem to have lost my cookbook from the Central Women’s Fellowship (or whatever we decided to re-name it so as not to offend the non-married ladies that attended).


Seminary Dinner Date

Every so often, I decide to whip up a batch of Mrs. Beacham’s soup. Professor / Dr. Beacham’s wife, served us a hearty soup one evening in the basement fellowship hall at Fourth.  Joel liked it, so we asked her for the recipe.  I kept the recipe card in a notebook for many years, but when we moved to another continent, the card didn’t make it.


This week I tried to make a batch without the official recipe.

Chicken breast, grilled and cut into bite-sized pieces
Chili ready diced tomatoes
Canned green chiles
creamed corn
chicken broth
half & half
shredded Mexican cheese
