Easy Way to Prepare Pandeyuca

For me, the texture didn’t turn out the same as the ones you find on the street. The flavor was right, though.

1 1/2 c milk
1/2 c oil
1 1/2 c yucarina
2 eggs
1 t sugar
1/2 t salt
3/4 c shredded costeño cheese

Blend all ingredients in the blender. Bake in greased muffin pan. Only fill the cups 1/2 full, because they grow a lot while baking. Bake for 20 minutes.
