When Asian Ingredients are Farther East

Pamona or even Carulla might carry tamarind, fish sauce, and rice noodles, but neither upscale grocery store is within walking distance of my apartment. I could wait until another day to hop on a bus to another neighborhood, but I already bought fresh bean sprouts. So, why not be cheap and see how substituting a package of ramen with shrimp flavor goes over?

RAMEN Pad Thai with Chicken

1 chicken breast
2 T sesame oil
3 cloves garlic, minced

1 package ramen with shrimp flavoring packet

1/4 c soy sauce
1/4 c sugar
2 T apple cider vinegar
1 T paprika

1 egg, slightly whisked with a fork

1 T black soy sauce
2 green onions (green parts only)
1/4 c roasted peanuts
1 c bean sprouts

lemon juice to taste

Cube the chicken, then stir-fry it with the garlic in the sesame oil. Meanwhile, prepare the ramen in hot water, reserving the flavoring packet.

Combine the flavor packet, soy sauce, sugar, vinegar and paprika in a small bowl. Add this and the ramen noodles to the chicken. Stir in the egg and continue to cook the mixture until the egg is no longer liquid.

Add the green onion, peanuts and bean sprouts along with 1 T more of soy sauce. Stir-fry the mixture until everything is heated through.

Sprinkle with lemon juice, or serve with lemon wedges as a  garnish.
