Betty Crocker has a recipe for banana cream pie on their website. Of course, they tell you to buy their refrigerated pie crust. They do give instructions for making the filling from scratch. The only Betty Crocker products that I’ve run across here in Bogota are box and pouch mixes…and I need to keep practicing pie dough anyway.
Last time I tried to make pudding, it didn’t thicken. So, I decided to buy the Colombian boxed stuff. They don’t have instant pudding mix—you still have to cook it, but at least you don’t have to worry about separating egg yolks and tempering them. Thankfully, the pudding thickened up well without being scorched in the pan.
Three hours later, we tried the banana pudding pie (without a tub of non-dairy whipped topping: another rarity, because they just whip their own here). Result? Tasted like medicine and the crust was tough.
