Thursdays are becoming “fish day” at our apartment. Exito has a pretty good price on frozen salmon, even without being “en promocion”, so I bought another package.
Because we had to renew our visas this week, our meals haven’t been according to an exactly pre-planned menu. So, when we got back from the MRE (Ministry of Relations Exterior) this morning, I had several ingredients that were ripe and ready…but for what? The mango got chopped up and tossed with strawberries and a banana. The avocado, tomato, canned corn, and bag of mixed salad ingredients (from a new guy on the corner) were arranged in a bowl and sprinkled with lemon juice and salt. And, Oh! Don’t forget a bit of cheese.
Rather than cook up a whole new pot of rice, I gave Joel the last of what was leftover in the fridge to go with his baked salmon, and I went low-carb.
