The last bit of Christmas-present peanut butter has been scraped from the plastic jar. Cookies this time. Only, they ended up sort of like snickerdoodles, because I added cinnamon.

Peanut Butter & Cinnamon Cookies

1/2 taza mantaquilla
1/2 taza mantaquilla de mani
1/2 taza azucar blanco
1/2 taza azucar moreno
1 huevo
1 1/2 taza harina de trigo
1/2 cucharadita canela
1/2 cucharadita polvo para hornear
1/4 cucharadita sal
3/4 cucharadita bicarbonato

Cream together the butter, peanut butter and sugars. Blend in the egg. In a separate bowl, sift together the dry ingredients. Combine the two mixtures and stir well. Place the dough in the freezer for at least 15 minutes.
Preheat the oven to 375* F. Divide the dough into 24 equal pieces. Roll each piece into a ball. Place the cookies on a baking sheet,  then flatten the ball with the tines of a fork. You should be able to fit 6 cookies in a toaster oven.
Bake the cookies for about 10 minutes, or until lightly golden. Do not overbake!
