Sesame & Peanut Stir Fry

The other day, one of my friends posted a link to this Whole Foods Market recipe.

It looked really good, but I wasn’t sure I had or wanted to buy some of the ingredients. So, here is my almost completely different version:

2 c cooked, white rice

3 T peanut butter
3 T apple wine
2 T salsa China
1 T sesame seeds
1/8 t ginger powder
1/8 t red chile powder

1/2 lb chicken breast, chopped
marinade:apple wine & salsa China

2 cups total:
shredded carrots
shredded cabbage
thinly sliced white or yellow onion
thinly sliced green onion

1/2 red bell pepper, chopped

3 T sesame seeds

Mix the peanut butter, apple wine, salsa China(the same as soy sauce as far as I can tell by the ingredient list), ginger and chile powders together. Set this mixture aside.

Preheat your wok and a little bit of oil. Add the marinaded chicken breast and stir-fry this meat until it is cooked through. Either remove the chicken or push it to the side. Add the red pepper to the wok and stir-fry it for about 2 minutes before adding the rest of the vegetables. Continue frying the vegetables another 2 minutes. Add the peanut sauce and stir all the ingredients together. Finally add the sesame seeds just before serving. Spoon the chicken-vegetable mixture over a cup of hot rice.
