She Strengtheneth Her Arms

A few days ago, Tuesday or Wednesday? I was reading Proverbs 31.  There is a verse that describes the virtuous woman as one that girds her loins and strengthens her arms. Maybe I need to think about making more of an effort at staying in shape.

Anyway, today while I was whisking egg whites for a meringue, I was reminded of that passage.  The other thought that came to mind was whether or not people ever used a whisk as an instrument of torture. Be thankful for your electric beaters, oh thou blessed ones!

Meringues present other challenges: What do you do if you can’t find cream of tartar in your grocery store, and don’t have the time or desire to ask for it via mail-order?  Several websites claimed that it isn’t necessary. Some suggested replacing lemon juice or white vinegar for the cream of tartar. So, that’s what I did, and it looks like it turned out fine.
