Apple & Arequipe Empanadas

No, really, I’m not trying to commit suicide by deep-frying all of our food today. However, rather than wasting the oil, I decided to try a pastry empanada.

To make 2 large apple pies, I only needed 1/2 of a granny smith apple, some ground cinnamon and 2 teaspoons of arequipe.

A from-memory pie crust recipe of 3/4 c flour, 2 T chilled butter, salt, sugar and cold water…

Not bad.
