Zucchini & Carrot Cake "Bread" with Oatmeal
2 c sugar
1 c oil
2 c total, grated zucchini & carrot
1 t vanilla
1 t ground cinnamon
1 t salt
1 t baking powder
2 c flour (for high altitude, I added another 1/2 to 3/4 cup of flour and decreased the oil)
1 c oatmeal
Preheat the oven to 350* F.
Grease and flour a rectangle cake pan.
Beat the eggs with the sugar, then add the oil, zucchini, carrot and vanilla. In a separate bowl mix the dry ingredients except the oatmeal. Combine the sugar and egg mixture with the dry mix, then fold in the oatmeal.
Pour the batter into the prepared pan. Bake for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean.
