It’s been about 3 years since we flew to Limmerick, Ireland when Joel was working for Digital River. We weren’t really impressed by their cuisine, although it was interesting to HAVE to eat out for every meal (The hotels there aren’t designed for the cheap American tourist interested in stocking the mini-fridge with microwavable meals and sandwich fixings.). The USA version of most "foreign" food is pretty jazzed up in comparison to the authentic stuff, in my experience at least.
When we lived in Brooklyn Park, we visited Claddaugh Irish Pub (restaurant) a few times. Joel ordered the shepherd’s pie once. He asks for it every so often. This afternoon the leftovers in our refrigerator seemed to spell out the necessary ingredients, so I mixed them together in a casserole and threw them in the oven. I didn’t have enough potatoes, so I added some flour, baking powder and an egg to the few mashed augratin potatoes to form a crust.
