I received a signed copy of this book this morning after listening to a power point presentation by the author. This evening I read through the introduction and flipped through the recipes.
This is a recipe book. In addition to the full-page color photographs, and nutritional information, there is usually a box that points out something interesting (and truly helpful) about food science in relation to each dish. It is a good book to help people learn how to think about cooking.
Don’t let his impressive bio. discourage you. I think that his experience teaching cooking classes helped him put together a book that is simple yet challenging.
Try it. I think you will be satisfied.
