Not pictured: Cream of Asparagus Soup
Joel slept until 4p.m. today, so I decided to serve a bowl of soup with warm bread as a first course.
We took a walk at Shingle Creek then returned home with just enough time for the main course, sausage & pasta, before Joel has to start his next shift at 7p.m.
The cream of asparagus soup turned out better than I expected. Frozen asparagus does not roast or broil well enough to digest, so I chose to blend it with chicken broth and half & half before simmering it with sauteed onion and bacon. Thicken it with a bit of grated cheese such as romano, parmesean, or mizithra. You may wish to add a dash of white pepper.
The sausage was Polish. Red onion and red bell pepper. Whole wheat spaghetti with butter, 2%milk, vermouth, salt, pepper, nutmeg, garlic. . . and mizithra cheese.
Top it off with chopped, fresh cilantro.
Lovely way to be cozy at home on a Friday night.
