Yesterday my assignment at Sela Roofing and Remodeling in St. Louis Park came to an end.
In "honor" of Mr. Sela as well as the fact that I have to figure out how to use 10 lbs of potatoes that Jen White gave to me, I fried some latkes for breakfast.
2 c shredded potatoes
1/2 white or yellow onion, chopped
1 T flour
1/2 t salt
1 egg, beaten
vegetable oil for frying
Be sure to squeeze as much of the water out of the potatoes as you can.
Combine all ingredients in a small bowl. Heat the oil in a frying pan. Drop potato mixutre into the hot oil. Flip latke when one side is crisp and brown. Drian on paper towel before serving. Seve HOT.
Some recommend serving latkes with apple sauce or sour cream. Joel suggests ketchup.
