Tongue outWhen you’re tired of grocery shopping, you find substitutes for what a recipe calls for.
Betty Crocker:  Best Chocolate Cake pg 73
Vitamin D milk + lemon juice for buttermilk
4 ounces white candy coating (fake white chocolate) for unsweetened baking chocolate
2 c all-purpose flour
2 c sugar
1/2 c shortening
3/4 c water
3/4 c milk + a few drops of lemon juice
1 t baking soda
1 t salt
1 t vanilla
1/2 t baking powder
2 large eggs
4 ounces white candy coating, melted and cooled
Preheat oven to 350* F
Grease bottom and sides of 2 round cake pans. Place parchment rounds in bottoms; dust lightly with flour.
Combine all ingredients and beat until smooth. Divide batter between the two cake pans.
Bake for 30-35 minutes, or until toothpick come out clean when inserted into center of cakes.
Cool the cakes completely on wire rack.
When cakes are cool, slice each in half, forming a total of 4 rounds.Birthday cake
In a springform pan, alternate layers of cake with your choice of pudding (s). I used chocolate and pistachio.
Refrigerate the cake for at least an hour. Clock
Just before serving, frost the cake with whipped topping or a similarly fluffy frosting.
I used the fluffy part of a white chocolate parfait recipe.
Garnish with a cherry, if desired.

3/4 c whipping cream (substituted: coconut cream milk)Island with a palm tree
1/4 c sugar
2 t cornstarch
2 egg yolks
4 ounces white baking chocolate (substituted: white candy coating)
1 t vanilla extract (left out because of flavoring in white candy coating)
3 c whipped topping ( I used 1/2 container of the frozen non-dairy whipped topping)
Bring the coconut milk just to a boil. Meanwhile combine sugar and cornstarch in a small bowl; stir the egg yolks in.  When the coconut cream is hot, add a small amount to the yolk mixture before returning all to the pan.  Continue to stir and cook this mixture until thickened, about 2 minutes.  Add the white canding coating until melted. Remove the cream from the heat to allow it to cool to room temperature. Fold in the whipped topping.
