(u-MOM-ee) One of the five primary sensations comprising the sense of taste: it refers to the savory taste of protein.
~ Webster’s New World Dictionary of Culinary Arts, 2nd Edition
YEARS and YEARS ago, I was told that if you combine spinach, garlic, and tomato, the flavor sensation increases exponentially. General Mills sensory panel or MCTC culinary arts school was the source of my instruction. I can’t recall which at the present moment.
The following list of ingredients of my lunch does not include garlic, but it still had a good amount of flavor.
Spinach Salad (with Garden Salsa Sun Chips on the side)
baby spinach leaves, washed and chopped
onion, sliced
Roma tomato, diced
Havarti Cheese, cubed
Honey mustard sauce (left over from KFC)
3-color peppercorns, freshly ground
