Joel says he is back in the mood for rice. So tonight we had ham fried rice. Stir-fry is good, but with the fried rice you don’t have the gravy-sauce. The flavor is all mixed in to the rice. Maybe one could compare the difference between fried rice and stir-fry with rice to a casserole and a meal of meat, gravy and mashed potatoes.
Ham Fried Rice
1 1/2c jasmine rice prepared in steamer with 2/3 c frozen peas to end up with 3 c total
1/2 c dry roasted peanuts
1 egg mixed with 1 T water
6 slices canadian bacon, cut into small pieces
1/2 c chunk pineapple, cut smaller (or pineapple tidbits would work)
1 small onion, chopped
1/4 c red pepper, chopped
1/4 c orange juice
1/2 c chicken marinade
Fluff the prepared rice and peas while cooling, in order to keep the individual grains separate.
Heat the vegetable oil in a wok. Add the egg and swirl to coat the bottom of the wok. Remove the "pancake" from the wok with a heat-safe spatula. Cut the egg into strips.
Saute the onion and red pepper until tender: 2-3 minutes.
Add the canadian bacon and pinapple and heat through.
Combine all ingredients in a large bowl. Return mixture to wok and heat through.
Joel didn’t like the pineapple, but still licked the serving spoon ( "I didn’t lick the serving spoon. I helped myself to a little more with it.").
