Joel likes soup for some of his breakfasts. This week he requested "My Favorite Soup".
My Favorite Soup
1 boneless, skinless chicken breast: baked, chopped, and shredded
1 carrot, chopped
1/2 c frozen corn
1/2 c green tomatillo salsa
1-2 cloves garlic, pressed
1 can chicken broth
3/4 c water (or to taste)
1/2 can red kidney beans, drained and rinsed
Mix chicken, carrot, corn, salsa, garlic, chicken broth, and water in a medium sauce pan. Bring the mixture to a boil. Lower the heat and simmer the soup until the carrots are softened. Add the kidney beans and continue cooking until they are heated through.
For a more hearty soup, add cooked rice or cooked diced or julienned potato pieces.
