The internet always has plenty of recipes, but we don’t always have all the ingredients that they call for on hand.
That was the case for me on Tuesday, even after going to Aldi’s, Rainbow and Cub.

Since Aldi didn’t have chicken broth on the shelf, but had condensed chicken and rice soup with celery in it, I purchased 2 cans. I left out the roux, because I thought the soup would be thick. It wasn’t. Even though I reconstituted the soup with 4 cans of water, it was still very salty.
I didn’t add the extra thyme or salt since those ingredients are in the creole seasoning.
I didn’t spend $2.88 lb for the red pepper the recipe calls for.
Joel thought that it would be good to serve for guests. He recommended adding shrimp and/or crayfish and using the roux to thicken the broth.
It was good with the hard roll that I sliced and warmed in the toaster oven.
