Fresh Bread

Cub’s bakery was advertising Bolillo rolls last week, so I decided to give in and purchase 2 for the tortas I had planned on the menu. It seemed a shame to buy fresh bread and not enjoy it.  Joel joked about not having fresh bread for 7 years (since we came to seminary…the day-old-bread rack).  The quality of bread is supposed to keep if you freeze it when fresh and use it immediately after defrosting.  I toasted the bolillo lightly last night, before assembling the sandwich. We had salty, canola oil baked steak fries on the side.

dijonnaise
shredded iceberg lettuce
chopped tomato
chopped red onion
warm (microwaved) canadian bacon
queso fresco
avocado
spicy, fat-free refried beans
bolillo roll
