Phil & Cindy Peterson along with their 5 children were our most recent guests for Sunday dinner. Returning to Sweden is their goal for next year. They are missionaries headed to Stockholm. The children enjoyed Joel’s TinTin books, and we enjoyed learning about another Scandinavian country. They had recently visited one of Cindy’s acquaintances in Rekjavik, so that added to our connections.

The Menu:

Pithivier: pastry wrapped around

Ham, Sun-dried tomato, mozzarella

Turkey, pesto, parmesan, zucchini


Peas with butter

Tri-colored Tortellini with garlic herb tomato sauce

Skyr Cake: (Icelandic)

Skyr is not easily found in US grocery stores. To make it yourself, drain yogurt through cheesecloth for 5 hours at room temperature.


32 oz. vanilla yogurt, drained

1 package gelatin

1/3 c sugar

1 ½ c boiling water

1 t vanilla extract

1- 8 oz. tub of whipped topping

Dissolve gelatin and sugar in boiling water. Cool. Blend yogurt, gelatin mixture and vanilla extract until smooth. Fold in whipped topping. Spread over graham cracker crust either in individual dishes or pie plate. Refrigerate for several hours or overnight, until set. Garnish with your favorite fruit.
