Pão De Queijo

(Cheese rolls)

Serve during breakfast, or teatime.


1lb manioc starch

½ lb mashed potatoes

1 T margarine

1/4 c vegetable oil

2 eggs

1 t salt

1/4 c parmesan cheese

1 c milk

Preheat oven to 350̊

The mashed potato should be cool before using

In a large bowl, mix all ingredients except the milk. Then add the milk slowly while you mix until you get a soft dough.

Place 1 inch balls spaced in an unbuttered cookie sheet (at this point the dough balls can be frozen for about two months. Bake from frozen–don’t thaw) and bake in moderate oven for about 20 minutes or until golden brown.

Makes about 25 rolls


The dough didn’t seem stiff enough to roll, so I poured the batter into muffin tins. I used a toaster oven and it took 25 minutes or so.

    Breakfast was two rolls from frozen, this morning. The mini-muffin size works just as well, and they lose the cup shape as they rise if you set them on a plain ungreased sheet pan to bake.The flavor is not exciting to this Midwesterner. Some day I may use a bolder cheese in the mix.
